Times: 10am to 4pm (Lunch 1 hour)

This is a follow-up course to the beginners course and will cover more techniques in shaping and starter management. 

We will work with adjusting hydration levels in starters and doughs. We will make bagels, a seeded sourdough and a specialty bread. 

A student on this course should be baking sourdough bread already and will be asked to bring along to the class a loaf of bread they have baked themselves and their refreshed starter.

Full hands-on instruction and demonstrations from Joe    the Baker in a small group setting of six students.
Bread formulas and baker’s notes from the day.
• 3 Sourdough Breads, you have made yourself.

Learn about terminology and equipment used when producing sourdough breads including the important “baker’s percentage” formula.  Learn how to scale up and adjust bread formulas.

You will be guided from start to finish how to make your own breads.
