Cruffin (Coconut Banoffee Pie)

This is a laminated sweet dough, baked in a muffin tin, dusted with sugar, and filled like an eclair.  A flaky and decadent treat that has taken the pastry world by storm. Banoffee pie filling is a banana and coconut cream filling, topped with toffee sauce and toasted coconut. 

I recommend eating cruffins the day they are purchased.
